Smack Daddy Pork
Start with Bon-in Boston Butt or Pork Shoulder Sprinkle the roast with your favorite seasoning (he uses Ron's Majik Dust)
Start coals on one side of the grill Sear the roast on all sides over hot coals
Lay sliced onion on the top of the roast Wrap in foil - double or triple wrapped (fatty side up)
Set in the grill off to the side of the coal
Cook for 2-3 hours Take off the grill and let the meat rest
Pull the meat apart, or slice and serve
