Grilled Lemon Basil Chicken – Tender juicy, Chicken Breasts marinated in a bath of fresh squeezed lemon juice, sweet summer basil, virgin olive oil and lemon zest.
6 boneless/skinless chicken breasts
3 large lemons
1Tbsp virgin olive oil
1 cup chopped fresh basil
2 Tbsp fresh lemon zest
Like many marinades, personal taste will determine how much or how little you use of each ingredient. I prefer a very 'lemony' flavor with lots of basil in the mix. Using a hand held grater, grate the outside of 1 lemon for your zest. Take that lemon and the other remaining 2 and microwave them for 30 seconds. Juice the 3 lemons into a gallon zip lock bag and add the grated zest. Take a bunch of fresh basil and cut thin strips into your marinade. Add a tablespoon or so of a good grade olive oil.
Wash chicken breasts and trim the fat from around the edges. Add your chicken to the marinade bag and let sit until you are ready to grill (or overnight if you choose).
Make sure when you're ready to grill the chicken that each piece has a nice coating of basil. Bring your grill temperature to around 400 degrees. Quickly sear both sides and then back the temperature off to 300 for about 8 minutes.
