Crisp and Tender Grilled Beets
Boil 6 well scrubbed beets for 15-20 minutes or microwave them until tender enough to pierce with a paring knife. Drain and let cool. Combine 4T butter, 2T honey and 2t grated fresh ginger in saucepan, heat gently and stir until mixture is smooth. Peel beets, slice into rounds about 1/3 inch thick, and brush with marinade. Grill the beets, turning once, about 6 minutes on each side.
