Sensational Summer Squash
Combine 6T olive oil, 2T white wine vinegar, 1 clove minced garlic, 1T minced fresh oregano and a pinch of salt in a baggie. Cut 4 slender, firm zucchini and/or yellow squash in half lengthwise, place in baggie with oil and herb mixture. Toss and let sit for at least one hour. Brush grill with oil. Lay squash cut side down on high or medium heat and cook 8-12 minutes, turning once. If desired, add wedges of onions and a pinch of hot pepper for additional flavor.
