Grilled Goat's Cheese stuffed Mushrooms
Mix together 4T olive oil, 1T lemon juice, 2 cloves finely chopped garlic and brush over 8 large Portobello mushrooms. Marinate for 3-4 hours. Mix together 8 oz soft goat's cheese, 1T snipped fresh chives and 4 finely chopped sun dried tomatoes. Grill the marinated mushrooms for about 5 minutes, turning once or twice, till tender. Place mushrooms on cookie sheet, spoon the cheese mixture into each mushroom and place back on grill for just a minute or until cheese starts to melt. Sprinkle with 3T chopped fresh parsley.
