Grilled Shrimp Skewers
1 lb raw medium shrimp, peeled and deveined
1/2 c butter, melted
1/4 c dry white wine
2 tbsp freshly squeezed lemon
2 cloves garlic, finely minced
2 tbsp fresh parsley, chopped
Salt & pepper to taste
Preheat the grill to medium heat.
Combine the butter, white wine, lemon and garlic in a large bowl. Mix in the shrimp, cover and place in the refrigerator for 10 minutes.
Remove the shrimp and reserve the sauce for brushing. Place the shrimp on skewers, making sure that they do not touch one another.
Place the shrimp skewers on the preheated grill. Cover and cook for 2 to 3 minutes. Turn the skewers over and brush with some of the reserved sauce. Cover and cook for another 2 to 3 minutes or until cooked through. Remove the skewers from the grill and season with salt and pepper to taste. Sprinkle with parsley.
